They’re creative and inventive, using strange ingredients and odd combinations to create something totally unique. It’s time to try Leeds’ most unusual cocktails…

The Butterfly Effect has one rather unusual ingredient – butterfly pea tea. It’s made from bright blue flowers grown in Thailand and Malaysia, and the tea shares their vivid hue. But, if you change the PH level, it transforms into a deep purple colour. Here, it’s served alongside a cocktail made with vodka, lychee liqueur and juice – combine the two and watch the colours change.

The Wasabi Dream at Vice and Virtue

Wasabi Dream, Vice and Virtue

Wasabi is a staple of Japanese cuisine, but Vice and Virtue have tapped into its daring side to make it the central focus of one of their gin cocktails. The Wasabi Dream uses Thomas Dakin Gin coupled with Akashi-Tai, a jasmine-infused sake specially imported from Japan. They add wasabi and a squeeze of lemon to bring out the flavours of the drink – trust us, it doesn’t taste as weird as it sounds.

What about a cocktail that takes you back to your childhood? Head down to Below Stairs for experiential creations like Primary Education. It’s designed by owner Manachain Monaghan to recreate the porridge his mother used to make for him as a boy. They take Oat-infused Roe and Coe Irish Whiskey and mix it with Butter Washed Bols Genever, Cocchi Americano Vermouth and just a hint of Muscovado sugar.

Get down to Be At One to try the Irish Disco Biscuit, a cocktail that tastes as good as it sounds. They take a big drop of Bailey’s, add a splash of peppermint liquor and then throw in a scoop of vanilla ice cream. The best bit? They blend it all together with Oreo cookies, making this the perfect drink if you’ve got a sweet tooth. To top it off, they stick a whole Oreo on top.

You can get two in one at The Alchemist. The Flavour Changing One is a completely clear cocktail that, if we’re honest, doesn’t look like much, but it tastes sensational – and it has a surprise in store. They cleverly layer one drink on top of another, so at the start you’ll taste Absolut raspberry and citrus, then from halfway down, it’s Briottet Mint and chocolate. How do they manage it? Simple, it’s just gravity.
