“Everybody can cook, we’ve been doing it for thousands of years, but as a chef it’s about taking the right thing from each ingredient to produce something special,” Murdoch told us. “We design a dish around the flavours first of all and then we think about the presentation. I’ve always believed that food needs to look good, because you eat with your eyes as well as your mouth.”

Murdoch has created a special 5-course tasting menu for January, which as you’ve probably guessed, is likely to change as the month goes on.
Every dish is designed to flow into the next, so you’ll start with something clean and crisp, like his duck and deer terrine with winter berry gel and pistachio sponge. From here, each dish builds towards the main – you’ll try roast porcini soup, with truffle cheese mousse, pickled pear and basil oil, then pan-roasted Scottish salmon with celeriac fricassee, pesto crust and lobster foam.
It’s a menu of small plates, so the main isn’t bigger in size, but it always stands out. Murdoch has something very special planned for his tasting menu – corn-fed chicken with cauliflower, boudin blanc and Thai yellow curry broth. It’s so beautifully simple, but the flavours come together perfectly. And the fifth course? A contemporary take on a custard tart with nutmeg and Yorkshire raspberry.
