Nestled inside Radisson Blu, FireLake is something of a hidden gem. You might not even realise it’s there, but trust us when we say, you need to check it out. And there’s never been a better time to do it because you can get 50% off mains all through September. It’s a one-off celebration of their new menu, created by Head Chef Craig Hillery, and you’re in for a treat.
FireLake is a delicious hybrid – they’ve brought American-style open-flame cooking to Leeds and given it a wonderful Yorkshire twist, so you can tuck into inventive dishes inspired by seasonal local produce. It’s all cooked on their Josper Grill, which takes centre stage in the kitchen – expect a mix of flame-cooked and wood-smoked dishes with a homemade feel.
As you’d expect, they have a fantastic selection of steaks, with flat iron, rump and rib-eye, all smothered in a house rub and cooked to smoky perfection on the grill. Each one comes with triple cooked chips, tomato chutney, fresh watercress and roasted shallots to create a hearty feast for half the usual price. But if you want something a little more refined, you won’t be disappointed.
You could try the mussels. Hillery has put his own stamp on them by adding chorizo and IPA. The bitter, citrus flavours of the beer cut through the heat of the sausage to create a deliciously balanced dish that’s perfectly paired with smoked paprika skinny fries. There’s lamb too. They take the very best cut of rump, so it’s full of flavour, coat it in their homemade citrus herb crust and cook it medium-rare, so it’s perfectly pink. It’s paired with anchovy butter, fresh kale, pomegranates and buttery fondant potatoes to create a simple combination that always hits the spot.
The burgers at FireLake are a sensation, but they come with a twist – a pretzel bun! It’s sweet and salty, bringing a new dimension to their homemade beef patties, which are topped with bacon, BBQ pulled pork, cheddar, gem lettuce, onions, gherkins and relish. If you prefer your burgers veggie, you can try the same bun with a squash, quinoa, pepper and onion patty, topped with lettuce, onion and burger relish.
They’re good to the veggies here. There are loads of options for you, so whether you want a stone-cold classic with a twist or an adventurous dish that will make you feel like the centre of attention, you’ll be spoilt for choice. There’s a new take on mac ’n’ cheese, with spinach and Jerusalem artichokes, or you can devour of a plate of fennel and roasted mushrooms with spiced tofu, chicory, blue cheese and honey dressing.
But if you want something really special, try the roasted beets and goats cheese. It’s a triumph of flavours and textures. You’ve got that silky smooth whipped goats cheese, the earthy beets and that crunchy celeriac, all mixed up with basil and blistered vine tomatoes that burst in your mouth. Heaven!
