Whether you keep yours simple with a trio of Yorkshire cheeses or experiment with spicy Korean kimchi, there are loads of delectable options for you to snaffle in Leeds. The only question left to answer is – which one will you try first?

They do it with pastrami and American mustard, they do it with mozzarella and chilli jam, but if you want proof why Miles & Co is such a gift come lunchtime, live a little with The Spicy. Don’t let the name scare you, it’s not too hot, but the question is, when did a little heat hurt anyone? They layer on strong cheddar, sharp kimchi and a delightfully spicy mayo on soft white farmhouse bread, before grilling til it’s golden and oozing out the sides. You can get a vegan version too.

Alley Cats are grilled cheese savants, but what’s their secret? Two extra thick slices of white bread, that’s what. It makes their toasties crisp on the outside and cloud-like soft on the inside. The finest example is The Colonel. It’s an almighty feast that sees strips of spicy buffalo chicken adorned with a medley of creamy melted cheddar and punchy blue cheese sauces which spills out of the side as it toasts. And if that’s not enough, you get a pot of cheese sauce for dipping!

Ooh la la, the French know how to do a grilled cheese sandwich as good as anyone, but Friends of Ham have put their own little twist on the classic Croque Monsieur. They swap out the ham for rich and smoky slices of chorizo, which adds an irresistible punch to the cheesy proceedings. They’re quilted in creamy cheddar bechamel which bubbles on top and oozes out from the inside of two slices of sumptuous sourdough. C’est magnifique!

The Outlaws food menu is only small, but there’s no doubt their eponymous grilled cheese takes centre stage. It’s lovingly crafted to the point of perfection, and it all starts with sourdough. Adorned with a triumphant trio of cheeses – brie, emmental and farmhouse cheddar, it’s the little touches that elevate this to the pantheon of cheese dreams. Spicy gherkin, red onion and cayenne pepper give it texture and flavour, the optional extra pastrami is a justified indulgence.

It’s an exercise in luxurious simplicity, keeping their combinations classic, but their ingredients expertly sourced. They create an artisan blend of British cheeses, ever-changing with what their supplier proffers, and embellish a pair of Nova Bakehouse sourdough slices with the end result. Lishman’s ham is an added extra nobody could judge you for.
