It’s still fine dining, it’s still rooted in fresh, seasonal produce, but he’s brought a new focus on the theatre of food. It’s a masterpiece of flavours and textures designed to take your dining experience to the next level. But don’t take our word for it – try it for yourself with this exclusive menu.

Five tasting plates, an exquisite palate cleanser and a glass of bubbly – oh my!

It’s time to succumb to your inner foodie because we’re giving you the chance to try Wilson’s most creative menu yet and all for just £35 (including a glass of bubbly). You’ll start with a light, fresh plate of Cornwall crab, paired with locally-sourced tomatoes, borage flowers and tomato water. It’s simple yet exquisite – the perfect start to an unforgettable night of food.

Next up is their cauliflower and spiced onion velouté. This is no average soup – they caramelise the onions with Indian spices, then top them with dukkah. The cauliflower velouté is poured on top, creating a wonderful combination of textures. And that leads us nicely onto the North Sea cod. It’s brined to bring out those delicious flavours and served on a bed of earthy artichoke mash. Coupled with pickled mussels and a light sauce made with roasted fish stock, this unusual dish is full of surprising discoveries.

The main, if you like, is sous vide Yorkshire chicken. It’s finished in the pan to give the chicken a deliciously crispy skin and served with a medley of veg – think fresh Yorkshire peas, girolle mushrooms and salsify. The whole thing is smothered with sherry sauce, made with the chicken bones, and it’s beyond divine.

Before you set to work on dessert, you need to cleanse your palate, so you’ll get a petite bowl of green apple and sake sorbet – trust us, it’s worth trying. And then it’s on to the religieuse! This one’s a looker – they bake these petite French pastries with a red sugar top, then fill them with strawberry diplomat cream and pile them one on top of the other. You can get all that with a glass of bubbly for just £35, but if you want to make the night even more special, there are a couple of extras you can add on the day.

First off, there’s a cheese board (you can choose any three from the trolley for just £8 extra) and then there’s the wine pairing. For £20 per person, you can try five perfectly paired wines. The crab’s served with a refreshing glass of prosecco, the velouté comes with a delicious Sancerre with ripe fruit flavours and the cod goes perfectly with their white Rioja. For the chicken, you’ll get a glass of Etna Rosso, made with Morello Mascalese grapes grown near the famous volcano, and dessert brings the sweet, luscious flavours of Monzabillac.
