When it comes to fine dining, Crafthouse is right up there with the best of them. Executive Chef Lee Murdoch has immersed himself in an endless cycle of innovation, as he looks for new and exciting ways to bring the latest seasonal produce to life. And there’s no better way to experience it than with this chef’s tasting menu.
He starts with the ingredients, working closely with his suppliers to find the inspiration behind each dish. They’re carefully crafted to be as beautiful as they are delicious and he leads you from one dish to the next with subtle cues that turn a simple dinner into a true culinary experience.

This is going to be a rather extravagant affair, filled with unusual ingredients and flavours you’d never expect to find together. You’ll start with a Curried Chicken Terrine. As you may have heard, Murdoch spent a large part of his career in the Middle East and he brought this curry paste recipe back with him, but the way they’re serving it is unique. They layer it between thin slices of chicken, roll it up in Serrano ham and poach it in a water bath. It’s served with pickled watermelon, aged bacon, whipped feta and a mint dressing to give this old French classic new life.
From here, you’ll move onto dish number two, the Sun Choke Velouté. They cook artichokes with cream, shallots, garlic and truffle to create a refined, yet warming winter soup that feels like a real treat. It comes with the perfect accompaniment – a homemade cracker smothered in truffle cheese.
And when you’ve finished that, they’ve got another treat in store – the Atlantic Salmon. They sear the salmon and the Atlantic prawns, then serve them with sweet piquillo peppers stewed with shallots, garlic and fresh herbs on a bed of freshly made gnocchi. The whole thing is topped with lobster bisque foam to create a wonderfully complex dish like nothing you’ve had before.
The tone changes with the next dish, as they bring out their Braised Short Rib of Orkney Beef. It’s cooked in red wine overnight until it’s fall-apart tender, then served with a spicy fritter, braised hispi cabbage, Sriracha potatoes and red wine jus flavoured with lime and rosemary. This dish is both familiar and new, soft and crunchy, so expect a wonderful juxtaposition.
Now, we’re onto the puddings and there are two of them to look forward to. First up is the Yorkshire Pavlova. They’ve taken a local delicacy and turned it into something quite exceptional – the Yorkshire rhubarb is cooked down with cinnamon and cloves until it’s almost a jam, then served with a sweet, sticky meringue. But this isn’t just dessert, it’s perfectly paired with its own special cocktail. It’s a tasty mix of Cointreau, Ketel One Citron, apple juice, lemon juice and Gomme syrup with just a dash of Peychaud’s, shaken and topped with rhubarb foam to bring together those wonderful flavours.
Finally, you’ll finish the night with a trio of treats as they bring out the Petits Fours. There’s a Yorkshire Rhubarb & Citrus Financier, a little, dense cake filled with all manner of yummy things. Rhubarb mingles with lemon, lime and orange, while almonds add a sweet nutty kick to proceedings. And when that’s gone, you can try their Blood Orange Pate de Fruit, an utterly refined take on the humble fruit pastille. Enjoy them with a shot of limoncello, topped with lemon juice, cream and ginger crumble.
