Dedicate a night to trying one of the best tequilas in the world as you devour Mexican street food.
Tequila Tapatio is one of Mexico’s oldest and most respected tequilas – which is why it’s such a coup that Tom Bartram is bringing four of their best creations to Chida Cantina for a one-off tasting and food pairing on Wednesday 16th August 2017. You’ll get to try their blanco, reposado and anejo, as well as the pinnacle of the Tapatio range – Gran Reserva Excelencia Extra Anejo, a glass of which would cost you more than the ticket price.
It’s all part of Chida’s mission to make you rethink this misunderstood spirit, as they set about showcasing the best tequilas in the world through a series of exclusive tasting events.
“Tequila has been traditionally produced in the state of Jalisco, Mexico for hundreds of years, and is Mexico’s most famous agave spirit, part of the country’s national identity and known all around the world,” Tom told us, but not all tequilas are equal. “Although the cheaper varieties dominated the category for decades, there has always been a core band of traditional distillers making exceptionally crafted 100% agave tequilas, and these have become very popular with spirits experts and drinkers over the past few years.”
Tequila Tapatio is one such brand. It’s made from 100% blue agave from the hills of the highland area of Jalisco, using centuries old techniques – they cook the agave slowly in old-style ovens and crush them using a traditional stone wheel, fermenting naturally with wild yeast, and distilling slowly and carefully in small copper pot stills.
Basically, this is good stuff and you’re going to get a chance to try it as they bring together four tequilas and four Mexican-inspired street food dishes. While you drink, Tom will dispel some of those age-old myths, and introduce you to the real tequila, explaining how it became the most popular shot in the world and why its reputation doesn’t do it justice.
You’ll start with Tapatio Blanco, tequila in its purest form. Expect an aromatic spirit with sweet fruit, a citrusy kick and a fresh but slightly peppery flavour. That will be coupled with a traditional blue tortilla, filled with salmon and chipotle mayo for a final kick. Just wait ’til you see how well these two go together.
Next up is Tapatio Reposado, which is rested in small oak barrels to give it smoother, sweeter and richer flavours. It’s a subtle difference, but one that Tom will help you to recognise. Sip it with Chida’s slow cooked lamb and jalapeño crema for a match made in heaven – that’s how Mexican’s drink their tequila, with good friends and good food.
The flavours will get more complex as you move through the evening. Take the Tapatio Anejo for example. It’s aged for 18 months in small oak barrels to create one of the world’s best sipping tequilas. It’s rich, spicy and complex, but surprisingly easy to drink – which you’ll see for yourself as you work through a plate of braised pig cheek with arbol sauce.
They have, of course, saved the best for last. Gran Reserva Excelencia Extra Anejo is the jewel in Tapatio’s crown, an extra aged tequila that will prove the spirit is up there with the best of them. Tom told us why, “It shows just how smooth and refined tequila can be, it would be treated like a fine XO cognac. This is produced in limited quantities and buying a glass of it in a bar would usually cost the same price as a ticket for this evening!” Enjoy it with a plate of churros with a chocolate dipping sauce for the ultimate end to the evening.
