This is your chance to explore the complexities of contemporary Japanese cuisine, as Issho welcomes four lucky winners to an exclusive chef’s table…

Issho is a contemporary restaurant where you can enjoy authentic Japanese flavours, served in new and interesting ways. They’ve put a fine dining twist on proceedings by sourcing the best ingredients fresh every day and cooking them up into a diverse array of dishes. You’ll move from sushi to deliciously smokey meats cooked on their robata grill, trying a little bit of everything from a menu that’s designed for sharing.

Get a personal introduction to Japanese cuisine from Head Chef Weike Zhao

What better way to rediscover Japanese food than by spending the night with Head Chef Weike Zhao? She’ll introduce you to the cuisine and the culture, as you work your way through ten exceptional dishes – you’ll even have a chance to get hands-on, by making some of the dishes yourself. The event will take place on Wednesday 28th February 2018, so make sure you’re free.

You’ll start with Pea Guac, a refreshing alternative to the norm, it’s made with avocado, peas and mint, then coupled with their homemade rice or sweet potato crackers. That will be served alongside their signature Chicken Karaage. Ever tried it? They coat chicken thigh in potato flour then deep fry it and serve it with homemade wasabi mayo.

Next up is Tuna Tartare, a stone cold classic made with diced sushi-grade tuna, aka miso and ginger, and their famous Tomato Salad with Whipped Tofu – the silken tofu is so smooth and creamy that you won’t believe it’s dairy free. And you’ll complete the set with Spicy Pork Baos – these doughy steamed buns are filled with belly pork, cooked overnight in their secret marinade and caramelised on the grill to give you the perfect crunch.

No Japanese tasting menu would be complete without sushi and they’re going to serve a selection for you to try, with a mix of fish, seafood and roe. Then it’s on to the main event – and you’re in for a treat because they’ve put the robata stove to good use, giving these dishes a wonderful smokey flavour. You’ll get to try their Rib Eye Steak, which is served with their special green chilli paste, and they’re also serving Miso Black Cod marinated in a sweet white miso sauce. Let’s not forget the Grilled Sweet Potato with Lime Butter – it’s wrapped in a hoba leaf, so you’ll get those earthy, smokey flavours coming through, then they’ll pipe in lime butter at your table.

And last but not least, you’ll be treated to a Japanese dessert selection. Think Caramel Purin (a custard cream pudding), Yuzu Curd (a bit like lemon curd, but made with yuzu), Sushi Rice Pudding (a Japanese version of a classic made with caramelised banana puree and pistachio nuts) and Chocolate Ganache.

Along with the food, you’ll be treated to a personalised wine and sake pairing. They’ll take time to find out what you like and put together a pairing that’s just for you.
