FireLake’s new winter menu promises Leeds diners the sort of flavour-filled fare found smoking on charcoal grills in North America. But there’s a twist. It also stays true to its roots with locally-sourced ingredients and adventurous adaptations that any true Yorkshireman would say were ‘right gradely’. Think bone marrow mac’n’cheese, pretzel bun burgers and sticky bourbon glazed pork belly.

If you’re our lucky winner, you can kick off proceedings with tasty treats like smoked ham hock croquettes with Yorkshire rhubarb chutney, or the chef’s personal favourite, the scotch duck egg starter. This delight comes with an extra rich duck egg yolk, wrapped in juicy sausage meat before being deep fried in flakey panko breadcrumbs. It’s all sorts of runny, gooey goodness and a darn fine way to start your meal. And if that’s not enough to wet your whistle, why not indulge in their sharing board? It comes with a lip-smacking combination of scotch eggs, croquettes, chicken thighs, chickpea fritters, dips and focaccia.
The menu took two months to put together. Head Chef Craig Hillery took inspiration from FireLake’s original restaurants across the pond, then spoke to local Yorkshire farmers to find out how he could give it a proper Yorkshire twist. This loving approach is apparent in the mains where carnivores can feast on 35-day aged Yorkshire rib eye steak, bourbon-laced pork belly with hush puppies (that’s an American cornmeal doughnut, by the way) or short rib of beef served with a side that might just change your relationship with pasta forever – bone marrow-infused mac’n’cheese.
Want something lighter? There’s black pepper tofu or crispy mackerel on toast, with no compromise on the flavour. And there’s still the opportunity to unleash your dark side with the sides, where three types of chips can be found – skinny, triple-cooked and, hold onto your horses, dirty fries loaded with cheese and jalapeño mayo.
£400 can go a long way, so you’ll have to save some room for dessert. Give Yorkshire a tip of your flat cap by devouring their baked Alaska, which comes with their homemade Parkin and cinder toffee ice cream, or go savoury with the Yorkshire cheeseboard, coupled with parmesan biscuits, rhubarb & ginger chutney and crisp granny smith apple.
